12 Chicken Tenders (rinse & pat dry)
3 cups sliced Mushrooms
1 cup Cherry Tomatoes
¼ cup Olive Oil
¼ tsp. Garlic Powder
¼ tsp. Italian Seasoning*
¼ tsp. Smoked Paprika**
Sea Salt to taste
Black Pepper to taste
1.) Preheat oven to 450
2.) Line your cookie sheet with sides with foil.
3.) In a small bowl combine olive oil, *seasonings, salt and pepper. (Save a skosh for the end)
4.) Brush both sides of tenders with the mixture and place on cookie sheet
making sure they aren’t touching each other.
5,) Add mushrooms and tomatoes on top of tenders and brush them with what’s left over of olive oil mixture.
6.) Sprinkle with parsley.
7.) Bake at 450 for 20-30 mins. uncovered.
Check for doneness after 20 mins.
8.) Squeeze a lemon of tenders.
* If you do not have Italian seasoning, simply use 1/8 tsp. oregano & 1/8 tsp. of basil
**Smoked Paprika has a nice smoky flavor.
Enjoy with some Baked Yams.
