Sweet and Sour Cabbage

This recipe was given to me 20 years ago by a good friend Mary Jo, and I used to love it with mayonnaise calling it “Hot Slaw”, but by omitting the mayonnaise it is a much healthier version.  I was pleasantly surprised that I didn’t even miss the extra fat.

4 cups cabbage shredded
2 Tbs. butter
½ cup water
3 tsp. rice vinegar or apple cider vinegar
2 tsp. Stevia
1 tsp. caraway seeds
¼ Sea Salt
black pepper to taste
In a medium sauce pan on medium heat add your butter and water.
After it melts, add shredded cabbage and cook for about 5 minutes until cabbage is translucent.
Add rest of ingredients; simmer for about 30 minutes, stirring often.
* You can adjust sweetness by adding more stevia if you’d like.
